Food Story
Jambalaya is an American Creole and Cajun rice dish of French (especially Provençal cuisine), African, and Spanish influence, consisting mainly of meat and vegetables mixed with rice. Our version is actually more characteristic of southwestern and south-central Louisiana, better known as the Cajun Jambalaya, as we don't use tomatoes in the dish. The idea being the farther away from New Orleans one gets, the less common tomatoes are in dishes. It is also important to know the difference between gumbo and jambalaya, where in gumbo the rice is prepared separately from the meat and vegetables. Jambalaya is the quintessential one-pot dish in Louisiana cooking that is regarded as pure comfort food filled to the brim with flavours.
