In Spain, chorizo is considered to be the king of sausages, with a long and rich history. However, the modern chorizo that we enjoy today is quite different to that recorded in the books. While the process of making chorizo is similar to other sausages, the one key ingredient that sets it apart is a special paprika known as pimenton, which gives the sausage its deep red colour. The blending of the meat, paprika and other spices gives a unique, hearty and spicy flavour that is great when served on its own or added to sandwiches and any other dishes.
