A dry-cured meat in Spain that is similar to chorizo, but made specifically with pork tenderloin. It is well seasoned with paprika from the Jaraíz de la Vera area along with other natural spices. The traditional curing process with a minimum of 3 months of maturation in the traditional dryers is strictly followed. It has the same quality and unique flavours of chorizo but a leaner version as tenderloin tends to have less fat in content.
